I am having trouble reading your publication on how to make chocolate from bean to bar. I read it online a few weeks ago and saved the link. I picked my cacao pods and fermented the beans and am now ready to make the chocolate. I was unable to access your publication from my original saved link but noticed you are also on the Substack App which I use. Now I am writing you on Substack to tell you, I have not been able to continue the instructions published in Substack beyond the last paragraph that says, "Don’t worry, I’ll take you through all the options…from the 7 to 10-day version for the devoted DIYers, all the way to the quick version for casual fun."

followed by the hyperlink:

"READ MORE, HOW TO MAKE CHOCOLATE FROM SCRATCH (FROM BEAN TO BAR)

The link doesn't work. I read many directions online but liked yours best. Is there any way I can read the rest of your instructions? Thank you, Annie Welch

Hi Annie,

The site is down at the moment, but we're working on fixing it. I'm hoping it'll be back up tonight, but definitely by tomorrow. Sorry about that!

Wonderful! If you do start with whole pods, be sure to try the beans at every stage. They really do transform from start to finish.

You are amazing! I've often wondered how to make my own chocolate and here you are with the ways and means. I've been here loving your posts for a long time now. You still come up with something new all the time. Keep up the great work! Lee Hoy.

Oh Ashley! I wish I was 20 years younger and not so broken up!! I’ve got the acreage just not the physically reliable body that I use to!

But I do enjoy reading all that you do and share and pass it on to people that I think might try some of the amazing things you do.

Now chocolate, be still my beating heart! I could live on it and would love to try to grow a tree but I doubt I will live that long, it would be fun to try😊

Please keep up the wonderful news I enjoy every word. You’re a woman after my own heart. I live in the north part of WA, zone 8!

You read my mind! I've always loved to make chocolate from mail-ordered ingredients in order to save on all the packaging that individually wrapped bars come in. But growing your own cacao is so next level! New goals for this Michigander's greenhouse for sure...

I have been focusing on dehydrating for my stores, having been gifted a 4 tray dehydrator by a friend. Since I like to make roasts of any meat, and chickens, in one pot type meals. I also have an Aprovecho twig stove (now a bit of a dinosaur but mine is hardly used) so I will attempt to cook a meal on it this week, with a small chicken and some dehydrated veggies and broth....I assume I will be feeding sticks into it for about 2 hours....

Amazing. I saw a cacao tree for the first time in my many years on this earth about 2 summers back in Atlanta, a botanical garden. Amazing trees, beautiful. I had no idea. This looks interesting though. I would try it but you already got me hooked on the idea of making cheese so….
