One of the best cheeses I've made was a traditional cultured motz. Most mozzarella these days is made with citric acid to get it to set, so you can make it in about half an hour. Traditionally it was cultured and it took 8 to 12 hours to make, and when you make it that way, it tastes completely different (and amazing). That's my favorite, but by no means an easy one.

Thanks re the hand crank grain mill (link), I use my Psalter grinder to grind my barley and wheat for small beers, and it grinds a bit too fine. (the way its mounted on wall I cant adjust it much). So I think I need something else. best from ORegon for now...

Just wondering about the whey, what uses can you make from it?
Also just drinking sounds great, I suppose it depends on how much lemon juice you use would make it palatable or not?
