Yes, I would very much like to have a few of those quince seeds. Would you care to have some of my red bunching onions for your garden in exchange? Here in NC we plant them in the fall (September until November...I've even planted some at Christmas successfully). In VT you may have to wait until spring, but you'd know better than I.

What a lovely birthday! It sounds perfect, especially with all of the amazing weather we've been having...although, I guess that's about to change and we'll be back to reality soon!

I have a quince tree that produced for the first time this year. I have about 20 fruits and have cooked a few...I think it will be an acquired taste. It has a quality that reminds me of rhubarb, which I've come to appreciate, although, a little goes a long way. I probably will can most of it in smaller jars so I don't have to rush into figuring out how to it.

My fridge just died, so I spent the day cleaning out jars, dehydrating and freeze-drying fruit that I packed away, and I'll be fermenting a cauliflower, cabbage and some carrots, because the delivery of the new one won't be until Halloween. I will be channeling your can-do attitude! I am grateful that I have all of the equipment and storage space for these solutions. Fortunately, I have a mini fridge that will take care of the essentials until then.

Happy Birthday! I also enjoy an autumn birthday (Halloween) and find this time of year to be my absolute favorite, for so many reasons.

I would also love to try growing some quince seed--I used to grow enough veggies to sell at our local farmer's market, but I've since downsized and am spending more time trying my hand at all sorts of fruits and berries, and quince is on the short-list (as are Seaberries and Mesabi cherries). Cold stratify them in your fridge this winter and then pot them up when they start to sprout early next spring. They'll go in the mail shortly.

Gleaned about 20+ pounds of quince and 4 pounds of figs, made 2 batches quince fig wine and 1 of quince plum wine. Thats 8 or 9 gallons of wine for the cost of the sugar. If I had pineapple or papaya skins, they also can be used in quince wine to address all that pectin in the quince. Even if you just use quince, it can work too, though the wine may not clear as well.

I try not to make too many trips to the brewing shop, but a pectin reducing powder is usually recommended if you don't have fig, papaya or pineapple available.
